Beautiful and rare, White King Salmon differs from Red King Salmon in both its texture and its rich, mild, almost creamy and delicate taste. Also known as Ivory King Salmon, it is not as "fishy" tasting as Red King Salmon, yet it still contains very high levels of Omega-3 oils.
White King Salmon, also known as Ivory King Salmon, is found in top restaurants from New York City to Seattle. No one is sure why about only one in 100 wild kings is white. One theory is that they feed differently. The bright red color of Wild Alaska Salmon is a result of a diet of shrimp and crab that contain carotenoids, pigments found in sea plants and animals. Beta-carotene, which makes carrots orange, is one familiar example. Scientists theorize that white salmon eat more squid and fish, which have fewer carotenoids. Some scientists are convinced the answer is in genetics. Either way, one thing is certain - White King Salmon is a rare treat that any wild salmon enthusiast doesn't want to miss!
